  • 2 low-carb tortillas
  • ½ cup sugar-free pizza sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • 10 –12 pepperoni slices or toppings of choice
  • ½ tsp olive oil for brushing
  • ½ tsp Italian seasoning
  • A pinch of salt and black pepper
  • Fresh basil leaves optional, for garnish

Method
 

  1. First, get the oven or air fryer heating up to 400°F (200°C) so it’s ready to go.
  2. Grab the tortillas and give both sides a quick spray with olive oil, then set them on a baking tray or a skillet.
  3. Spread a thin layer of sugar-free pizza sauce over each tortilla — just enough to cover it without making it soggy.
  4. Sprinkle on mozzarella and parmesan, and add pepperoni or any keto-friendly toppings hanging around.
  5. Toss on a bit of Italian seasoning, plus some salt and pepper to boost the flavor.
  6. Bake the tortilla pizzas for about 6–8 minutes, or basically until the cheese looks golden and bubbly.
  7. Let them rest for a couple of minutes before slicing, and add fresh basil on top if a little extra flair sounds good.
