Ingredients
  

  • 1 lb ground beef (or turkey)
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tbls taco seasoning (sugar free homemade is best)
  • 1 can(10 oz) of diced tomatoes with green chilies
  • 4 cups beef broth
  • 1 cup heavy cream
  • 4 ozcream cheese, softened
  • 1 cupshredded cheddar cheese
  • 1/2 cupshredded Monterey Jack
  • Salt and pepper to taste
  • Toppings of your choice to garnish,such as avocado slices, jalapeños, cilantro or sour cream

Equipment

  • Dutch oven or soup pot
  • Wooden spoon
  • Measuring cups/spoons
  • Ladle
  • Skillet (if user has to brown meat separately)

Method
 

  1. Add olive oil to soup pot heat until shimmering. Stir in ground beef and salt and cook 6–8 minutes or until browned. Drain excess fat if needed
  2. Stir in onion and garlic; sauté 3 minutes or until softened
  3. Add taco seasoning and mix, making sure the beef is evenly covered
  4. Add broth and tomatoes. Simmer for 15 minutes for flavors to mix
  5. Turn the heat to low, add the cream cheese and stir until melted in, stir in the heavy cream, the cheddar and Monterey Jack. Stir until smooth
  6. Toss in salt, pepper, or your extra taco seasoning
  7. Divide soup among serving bowls, topping with desired toppings

Notes

A recipe for homemade taco seasoning (chili powder, cumin, paprika, garlic, onion powder) with no hidden sugars.
If you like thicker soup, simmer it for an additional 10 minutes uncovered.
