Ingredients

  • 1 cup fresh or frozen (unsweetened) strawberries
  • 1 cup unsweetened almond milk
  • 1/4 cup cream cheese (softened)
  • 1/2 cup heavy cream or full-fat Greek-style yogurt
  • 1 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • Sugar substitute to taste (liquid stevia or erythritol)
  • 1/2 cup ice cubes

Equipment

  • Blender
  • Measuring cups and spoons
  • Knife, cutting board (if using fresh berries)
  • Glasses for serving

Method

  1. If using frozen strawberries, let them thaw slightly; if fresh, wash and hull them
  2. Add almond milk, heavy cream, cream cheese, strawberries, chia seeds, vanilla extract, sweetener, and ice to a blender
  3. Blend on high for about 1 minute until smooth, scraping the sides if necessary
  4. Adjust the texture by adding more ice for a thicker smoothie or more almond milk for a thinner consistency
  5. Pour into glasses and garnish with a sliced strawberry on the rim before serving

Notes

For something thicker and more milkshake-like, use frozen strawberries.
Add in 1 tbsp of MCT oil for extra keto fats.
Keep servings in check — strawberries may be low-carb, but we still need to exercise portion control.
This smoothie is light and fruity – a cool drink to kill sweet cravings without skyrocketing carbs.
