Method
- In a saucepan, add strawberries and cook over a dim flame for 8–10 minutes or until softened. Stir occasionally.
- Smush the strawberries until you achieve your preferred consistency with a potato masher.
- Stir in erythritol and then lemon juice; cook 2–3 more minutes.
- Remove from the heat and fire. Stir in chia seeds. Let the mixture stand for 5-10 minutes; it should become viscous.
- Stir in vanilla and let fully cool.
- Transfer to a jar and refrigerate for up to 2 weeks.
Notes
Add jam ingredients to a food processor or blender and blend until smooth (if you prefer no-chia-seed jam, then blend them all rather than mashing the berries first).
Sweeten to taste depending on the ripeness of the berries.
Can freeze up to 3 months.
