Ingredients
  

  • 1 cup heavy whipping cream
  • 1/2 cup natural peanut butter unsweetened, no sugar added
  • 2 tbsp powdered erythritol or preferred keto sweetener
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: dark chocolate shavings or chopped peanuts for garnish

Method
 

  1. Whip the heavy cream in an electric mixer until soft peaks are obtained in a mixing bowl.
  2. In another bowl, mix peanut butter, the sweetener, vanilla extract and salt. Mix until smooth.
  3. Fold the whipped cream into the mixture of peanut butter gently until all is mixed and fluffy.
  4. Pour the mousse into serving bowls/ramekins.
  5. Allow to set in the refrigerator at least 30 minutes.
  6. Dark chocolate shavings or chopped peanuts may be garnished and served.
