Method
- Whip the heavy cream in an electric mixer until soft peaks are obtained in a mixing bowl.
- In another bowl, mix peanut butter, the sweetener, vanilla extract and salt. Mix until smooth.
- Fold the whipped cream into the mixture of peanut butter gently until all is mixed and fluffy.
- Pour the mousse into serving bowls/ramekins.
- Allow to set in the refrigerator at least 30 minutes.
- Dark chocolate shavings or chopped peanuts may be garnished and served.
