Ingredients
  

  • 1 cup all natural creamy peanut butter (no added sugar)
  • 1/2 cup erythritol (or monk fruit sweetener)
  • 1 large egg         
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • sea salt pinch or sugar-free chocolate drizzle

Equipment

  • Mixing bowl
  • Hand whisk or hand mixer
  • Measuring cups/spoons
  • Baking sheet with parchment paper
  • Fork for crisscross pattern
  • Wire cooling rack

Method
 

  1. Set oven to 350°F (175°C). Line baking sheet
  2. Large bowl, mix peanut butter, erythritol, egg, baking powder, and vanilla. Stir until smooth dough forms
  3. On very lightly floured surface, roll dough to 1-inch thickness. Place on a baking sheet 2 inches apart
  4. Press each ball twice with the back of a fork to make crisscross marks
  5. Bake for 10 to 12 minutes or until edges are set. Centers should still be soft
  6. Cool cookies on baking sheet 5 minutes before transferring to rack

Notes

Transfer to airtight container and store at room temp (1 week); or freeze (3 months).
