Ingredients
  

  • 1/2 cup unsalted butter
  • 1 1/2 cups heavy cream
  • 2 cups fresh Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1/2 tsp nutmeg (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley

  • Whisk

Method
 

  1. Melt the butter in a saucepan over medium heat.
  2. Add minced garlic and cook, stirring 1 minute.
  3. Stir in heavy cream, whisking to combine, and simmer over medium-low heat for 5 minutes.
  4. Stir in Parmesan cheese, a little at a time, stirring constantly until melted and smooth.
  5. Season with nutmeg, salt, and pepper, and simmer an additional 2 minutes.
  6. Plate it over keto noodles replacements or chicken or steamed broccoli, and garnish with parsley.

Notes

Never, ever use pre-grated Parmesan for a luscious texture.
Don’t allow the soup to boil after you’ve added the cheese — it will curdle.
You can also add grilled shrimp or chicken to make a complete keto meal.
