Ingredients
  

  • 6 large eggs
  • ¼ cup heavy cream
  • ½ cup shredded cheddar cheese
  • ¼ cup diced bell peppers
  • ¼ cup chopped spinach
  • ¼ cup cooked bacon or sausage chopped (optional)
  • Salt and pepper to taste
  • 1 tsp olive oil or non-stick spray

  • Mixing bowl

Method
 

  1. Preheat Oven: Preheat the oven to 375 o F (190 o C). Grease a muffin with an olive oil or muffin liners.
  2. Mix Eggs: Add eggs, heavy cream, salt and pepper in a mixing bowl and mix until it is well blended.
  3. Add Fillings: Add cheese, bell peppers, spinach and cooked meat as desired.
  4. Fill Muffin Tin: Fill the muffin tin cups with the mixture.
  5. Bake: Bake the egg muffins 15-18 minutes or until the muffins have set and are lightly brown on the top.
  6. Cool and serve: Allow the muffins to cool off 2-3minutes and then remove them out of the tin. Eat hot or keep cold in the refrigerator up to half a week.
