Preheat Oven: Preheat the oven to 375 o F (190 o C). Grease a muffin with an olive oil or muffin liners.
Mix Eggs: Add eggs, heavy cream, salt and pepper in a mixing bowl and mix until it is well blended.
Add Fillings: Add cheese, bell peppers, spinach and cooked meat as desired.
Fill Muffin Tin: Fill the muffin tin cups with the mixture.
Bake: Bake the egg muffins 15-18 minutes or until the muffins have set and are lightly brown on the top.
Cool and serve: Allow the muffins to cool off 2-3minutes and then remove them out of the tin. Eat hot or keep cold in the refrigerator up to half a week.
