You must have been longing to eat the delicious smell of freshly made cinnamon rolls but need to remain in your low-carb diet, then these Keto Cinnamon Buns are what you have always wanted to eat. They are non-sugary, gluten-free, and fluffy, spiced to the point of perfection, and topped with a creamy frosting. They are prepared with almond flour and mozzarella dough, and they give all the sweet roll essence without the carbs. An ideal choice as breakfast, brunch or a guilt free snack at any time of the day.

Ingredients
  

  • For the Dough:
  • 2 cups almond flour
  • 2 tablespoons cream cheese
  • 1 ½ cups shredded mozzarella cheese
  • 1 tablespoon baking powder
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the Filling:
  • 2 tablespoons unsalted butter melted
  • 2 tablespoons brown sugar substitute like Swerve or Monk Fruit
  • 1 tablespoon ground cinnamon
  • For the Cream Cheese Frosting:
  • 2 ounces cream cheese softened
  • 2 tablespoons butter softened
  • 1 tablespoon powdered erythritol
  • ½ teaspoon vanilla extract
  • 1 tablespoon heavy cream optional, for consistency

Method
 

  1. Instructions
  2. Preheat the Oven:
  3. Preheat your oven to 350°F (175°C). Prepare a baking dish with a parchment paper.
  4. Make the Dough:
  5. Mozzarella cheese and cream cheese are added in a microwave-safe bowl. Heat up 6090 seconds until liquefied, stir to mix.
  6. Add Dry Ingredients:
  7. To the mixture of cheese, add almond flour, baking powder, egg, and vanilla extract. Blend until smooth dough is achieved (you can even have to knead it by hand).
  8. Roll Out the Dough:
  9. Put the dough between two layers of parchment and roll it into a rectangle (approximately 1/4 inch thick).
  10. Prepare the Filling:
  11. Stir butter, cinnamon and brown sugar substitute. Sprinkle the mixture all over the dough.
  12. Form the Rolls:
  13. Beginning at one long edge, roll the dough into a log with caution being taken. Let a sharp knife divide it into 8 equal parts.
  14. Bake:
  15. Prepare your baking dish and place the rolls in it and bake them 1820 minutes or until brown.
  16. Prepare the Frosting:
  17. During baking, the frosting tools should be combined until creamy. Add in a small slice of heavy cream, as necessary.
  18. Cool and Frost:
  19. Allow the buns to cool down to 5-10 minutes and spread the frosting all over the top.
  20. Serve:
  21. Eat hot with your favorite coffee or tea!
