Ingredients
  

Crust
  • 1 lb ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Toppings
  • 1/2 cup of keto pizza sauce (recipe #2 listed below)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced pepperoni
  • Fresh basil for garnish

Equipment

  • Large mixing bowl
  • Parchment paper
  • Baking sheet or pizza stone
  • Wooden spoon or spatula
  • Oven

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or Silpat.
  2. In a large bowl, mix ground chicken, Parmesan, egg, garlic powder, and Italian seasoning until well combined.
  3. Spread the mixture into a thin, even ¼-inch circle or rectangle on the parchment.
  4. Bake for 20-25 minutes, or until golden and cooked through. Remove from oven.
  5. Spread pizza sauce over the crust; sprinkle with mozzarella and pepperoni.
  6. Bake 8–10 minutes more or until cheese is melted and bubbling.
  7. Slice and top with fresh basil before serving.

Notes

The crust should be as brown as you like before adding toppings.
Broil 2 minutes at the end for extra crunch.
Chill leftover rolls, up to 3 days; warm in oven.
It’s a pizza that you don’t feel like crap after eating and is easy to make.
