- In pot, brown beef over medium heat (6-7 minutes). Drain fat
- Stir in butter, onion, garlic; sauté until soft
- Add beef broth to pan and stir really well, bring to simmer 10 minutes
- Add softened cream cheese and stir until melted. Add heavy cream, mustard, paprika
- Gradually stir in cheddar, cook stirring, until smooth
- Stir in diced pickles for that classic cheeseburger flavor
- Top with bacon, lettuce or more cheese
Notes
For a thicker soup, allow to simmer uncovered, or add some xanthan gum (¼ tsp).
Sprinkle some hot sauce on top for a spicy “bacon cheeseburger” flavor.
Leftovers reheat nicely, but add extra broth to loosen texture
