Ingredients
  

  • 1 ½ cups almond flour
  • 2 large eggs
  • ¼ cup unsweetened almond milk or coconut milk
  • 2 tbsp melted butter or coconut oil
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tbsp sweetener erythritol or monk fruit
  • Pinch of salt

  • Mixing bowls
  • Whisk
  • Measuring cups and spoons

Method
 

  1. Turn on the waffle maker and grease it with butter or oil.
  2. Add almond flour, baking powder, sweetener, and salt to a medium bowl and mix using a whisker.
  3. In a separate bowl, large eggs, almond milk, melted butter and vanilla extract are mixed together in wet ingredients.
  4. Combine wet and dry ingredients until a smooth batter is obtained. Allow to cool a little and become thicker, 5 minutes.
  5. Batter is poured in the waffle maker and left to cook as per the instructions of your machine until golden brown and crisp.
  6. Gently remove, and place over keto-friendly toppings, such as whipped cream, berries or sugar-free syrup.
