Ingredients
  

  • 1 lb ground beef
  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 garliccloves, minced
  • 4 cupsbeef broth
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced pickles
  • 1 tbsp mustard
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Method
 

  1. In pot, brown beef over medium heat (6-7 minutes). Drain fat
  2. Stir in butter, onion, garlic; sauté until soft
  3. Add beef broth to pan and stir really well, bring to simmer 10 minutes
  4. Add softened cream cheese and stir until melted. Add heavy cream, mustard, paprika
  5. Gradually stir in cheddar, cook stirring, until smooth

Notes

For a thicker soup, allow to simmer uncovered, or add some xanthan gum (¼ tsp).
