Ingredients
  

  • 2 cups strawberries, hulled and sliced
  • 1 cup water
  • 2 tbsp powdered erythritol
  • 1 tbsp lemon juice
  • 2 tsp unflavored gelatin powder

  • Fine mesh strainer or cheesecloth
  • Small bowl
  • Measuring cups/spoons
  • Jar for storage

Method
 

  1. Cook strawberries in water in a saucepan over medium heat, until they are soft about 10 minutes
  2. Strain mixture through a fine sieve, discarding solids, and return liquid to saucepan
  3. Whisk in erythritol and lemon juice, return to a low simmer
  4. In a small bowl, sprinkle gelatin over 2 tablespoons of water and let sit 5 minutes to bloom
  5. Use a wire whisk to stir the swollen gelatin into the hot strawberry liquid until it has completely melted
  6. Transfer the mixture to a jar or container and chill for at least 4 hours, until firm

Notes

For a more solid jelly, use an additional ½ tsp gelatin.
Avoid boiling after adding gelatin.
Keep in a refrigerator for up to 2 weeks.
