After being pressed into a pan, the base is spread with a silky layer of melted chocolate, making these a two-layer, rich dessert.

Loaded with healthy fats and moderate in protein, these bars are a perfect snack or dessert for any low-carb keto diet. Ingredients
  

  • 1 cups almond flour
  • 1/2 cup melted butter
  • 1/2 cup powdered erythritol
  • 1/2 tsp vanilla extract
Peanut butter layer
  • 1 cup natural peanut butter
  • 1/2 cup powdered erythritol
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
Chocolate topping
  • 1 cup sugar-free chocolate chips
  • 1 tbsp coconut oil

Equipment

  • Mixing bowls
  • parchment lining the 8x8 inch bakingdish
  • Measuring cups/spoons
  • Microwave-safe bowl
  • Rubber spatula

Method
 

  1. Combine almond flour, erythritol, melted butter and vanilla. Press evenly into lined dish. Chill 10 minutes
  2. In bowl, stir together peanut butter, erythritol, melted butter and vanilla. Spread evenly over chilled crust
  3. Melt chocolate chips and coconut oil together. Spread over peanut butter layer
  4. Chill1–2 hours or until it is firm
  5. Cut into squares with sharp knife. Store chilled

Notes

For crunch, top with crushed peanuts before chocolate sets.
Delicious taste and unfortunately I’m wasting a day out, where I wanted to share these so it wasn’t a day lost doing nothing, because this isn’t a cookie consistency and they just crumble all to hell.
