Ingredients
  

  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 (14 oz each) cans crushed tomatoes(no sugar added)
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 teaspoon red pepper flakes, crushed(optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp erythritol or monk fruit (optional, but helps with acidity)
  • Fresh basil leaves for garnish

  • Large saucepan or Dutch oven

Method
 

  1. Mince the garlic, and finely chop the onion
  2. Heat olive oil in saucepan, over medium heat
  3. Add onion and garlic and sauté for 3-4 minutes or until soft and fragrant
  4. Stir in crushed tomatoes and tomato sauce
  5. Stir in the oregano, basil, salt, pepper and chili flakes if using
  6. Reduce heat to low. Cover and simmer for 20-25 minutes, stirring occasionally
  7. If too sour, add erythritol. Adjust salt and pepper
  8. Use right away over zucchini noodles, shirataki pasta or grilled meats

Notes

If you prefer a smoother sauce, blend with an immersion blender before serving.
Add some ground beef or Italian sausage to give this keto recipe a meaty bolognese twist!
